Ok… tonight we went to Haxengrill, which is where that photo was taken. We got the whole knuckle and split it. Amazing.

Hmm. You actually cook it on the cedar planks??
I've eaten, and cooked lots of salmon over the years, and if this is true, I've somehow missed this.

Yes after soaking the planks in water overnight. It can't be red cedar, I used white.
    Look into it.

Yes. The base is a forge my father made for me years ago and the rest I put together with stuff I had around.

I reconfigure it depending on what I'm doing.

We only spent a few nights in Munich before moving on to other destinations, so no further recommendations there. We didn’t eat anything else there that was memorable. However, we are now wrapping up 2 nights in Salzburg Austria, and I enthusiastically recommend going there if you are able. It is a beautiful city with a vibe similar to Florence and a fantastic medieval era fortress perched above it with great views of the Alps and the city below. You can tour a significant part of the fortress including walking up to the top of a tower for the best views (lots of steps). Just a great city. We are wrapping up in the Swiss Alps over the next few days.
