Raw oysters are the best. Squeeze some lemon juice on it and a little Tabasco. Or you can bake them, grate some parmigiano reggiano and some chopped bacon, can’t get any better.

They're a member of the jack family. You catch them close to the beach from Baja to Peru. Very dark, oily meat. We tried making ceviche out of it and it was awful! Fun to catch though!

Luckily, it's not a commercial fish. If Mexicans won't even eat ceviche made from it, you don't want to try! They make ceviche out of everything!

    Shrimp off the boats

    Dungeness Bay WA for crab

    WA for salmon

    Maine for lobster

Nova Scotia for scallops and mussels

I once flew from Pittsburgh to Chicago to San Francisco to anchorage to Kodiak Island just to go to the Alaskan King Crab Festival I was the only one eating crab

I've worked on many yachts fishing from Alaska to Panama. Always fresh seafood that we had caught either that day, or the day before. One guy I worked for wouldn't eat a fish if it had been frozen. He's the reason I can't eat lobster anymore. Ate too much of it. I'm a little picky about my seafood.
    Love breaded catfish!!
