What's Cookin? offseason

I haven't tried hot dogs in the air fryer but I will. You just lay the dog in a bun inside the slow cooker and then dress it when done? That sounds pretty good!

I just have the 17" Adventure Ready for tailgating and camping. I used to take a set of three cast iron skillets camping and the 17" Blackstone is so much more convenient. I don't have to find a way to clean the skillets after each use and I can cook a big breakfast all at once.

Yous guys camping, and our camping is way different. We bring enough food for the 1st day, and after that its eat what You catch, or starve. 1st one that has to eat someone else's stuff is the loser.

 

I was like that long ago having spent weeks up in northern Ontario and just about starving. If I never eat a dehydrated pea again I will be ok.

Now 11 of us go camping together. A state park lodge. Two beer refrigerators. A full kitchen with utensils and cooking gear. Charcoal grill.

 

With my 8-year-old grandson that wouldn't be a very good option

My best friend and I have become so bad! He takes a generator and he is a gourmet Chef and he cooked some of the most amazing food you could ever imagine out in the woods.

This would work perfect for tailgating as it satisfies best when people are standing around in a group. When I butcher a deer, I always cut out a couple plump roasts from the hind quarter. In prep for a group function or tailgate I thaw it completely and inject it with a ton of a marinade and seasoning and put it in a ziplok bag, and into the fridge for a couple days.
When it's time to cook I put it on a hot grill and let it set a couple minutes until a nice crust appears, flip it over, shave off 1/4" thick pieces with a filet knife and hand them out to the crowd. By the time I have handed out the 8 or 10 pieces it's time to flip it and shave again. You can go as deep as you want depending on how rare someone wants the meat, venison is more tender and tastes better the more rare you eat it. The injection makes sure each piece is nicely marinaded and seasoned and every morsel of the roast gets eaten.

 

nice. citris of some form is great in a marinade. it breaks down the meat and makes it very tender. steaks, roasts whatever it makes them tender. we usually put some lemon juice as well as other things in our marinade. lime is also good. you don't really taste it after but it helps tougher cuts or any cut for that matter.

 

Don't know if you hunt but cream, or whole milk, is very good to tenderize and remove gamey flavor, the enzymes in the milk break down tough tissue and absorb gamey flavor. Soak it overnight.

 

Also works for certain fish that some claim are too fishy tasting. LoL

 

no too old now. They would find me dead out in the woods now walking these hills. Lived on venison when I was in college many moons ago. I just fish now.

 

I think about that a lot as well. I am 70 and in pretty good health but I spend a week hunting in the Allegheny National Forest by myself and I always wonder just how far I want to get away from the truck.

 

You are a couple of years older. I'm 67. Eastern ohio. Way too old to drag those big ole deer out of those woods. Bad back, bad shoulders, bad knees. Abused myself when I was new.

 

My in laws are outfitters in the mountains of New Mexico

They live almost entirely on elk impala and oryx

I have always felt the only way to hunt was bow hunting.
Im not downing guns in anyway, but as someone that has done both, I think Bow hunting is the only real way

 

There is defiantly more diligence required but I can't tell you how many deer I see every year which were wounded by bow. I hunt bow as well but I try real hard to resist the urge to shoot unless I am sure I can make a quick clean kill.

 

Hmm. I've never seen it. Im not saying you haven't, but everyone I know that bow hunts track them down if they aren't put down.

 

I don’t hunt, but I let a limited number of people hunt my property.

Two bow hunters and they set up far from each other. Neither will shoot if they aren’t confident in a clean kill. One even spent an entire day tracking a wounded coyote just to put it out of pain.

 

That's as it should be, or don't do it.
