    So is that:

    a) a new Mexican restaurant close to you
    b) a Mexican restaurant in the state of New Mexico
    c) a Taco Bell
    d) all of the above

    a but I wish it was b

My wife is from New Mexico and her dad had a restaurant in the middle of the desert

The food in New Mexico is significantly different than what you get most anywhere else and much more authentic and better

With that said I do like Taco Bell crunchy tacos mostly because they aren’t screwed up

    Rant

We had one very good authentic Mexican restaurant in Pennsylvania and on Tuesday FBI/ICE raided it and took 8 employees now it’s closed because restaurants can’t get help

    WTF was gained there

    Stupid stupid stupid

    End of rant

I've heard that from an uncle that used to live down there. Also have a friend from Mexico who I've gotten a few recipes from (including his family's version of a Michelada).

I've got a restaurant close-by that's maybe 75% authentic, so not bad, but not the same.

    Is this in western Pennsylvania

    Will travel for Mexican food

My father in law taught me how to cook Mexican food

I have to import a lot of the ingredients or grow them myself because you just can’t buy the ingredients even in the little Mexican groceries

Each year I eagerly anticipate this day so I can share my favorite Dad Joke of all time:

Most people don't know that back in 1912, Hellmann's mayonnaise was manufactured in England. In fact, the Titanic was carrying 12,000 jars of the condiment scheduled for delivery in Vera Cruz, Mexico, which was to be the next port of call for the great ship after its stop in New York.

This would have been the largest single shipment of mayonnaise ever delivered to Mexico. But as we know, the great ship did not make it to New York. The ship hit an iceberg and sank, and the cargo was forever lost.

The people of Mexico, who were crazy about mayonnaise, and were eagerly awaiting its delivery, were disconsolate at the loss. Their anguish was so great, that they declared a National Day of Mourning, which they still observe to this day.

The National Day of Mourning occurs each year on May 5th and is known, of course, as ...

    ...

    ...

    ...

    Sinko de Mayo.

I'm making myself laugh a lot tonight.
I worked for a Tex Mex place as a cook for about 2, and a half years.....along long time ago , in a galaxy far far away

Tex Mex sucks it’s just a bunch of mush on a plate

In New Mexico lots of red and green chile, real tamales chile relleno etc

You can get green chile on a hamburger in New Mexico

It’s like eating Chinese in Biloxi vs Chengdu

they shouldn't have left town. it was like Hoover leaving Canton.

back in the early 80's while working as a young electrician. we did all the electric service for a tomato grower and packer. he sold the same tomatoes to Hunts and Heinz and Red Gold.

yes, the population there has always had Mexican heritage and ties. american indian as well. southern new mexico is heavy in this population along with the elected officials.

my brother used to work with a guy from mexico. they actually lived together with a couple of other guys. they were marble masons and traveled all over the country for a large company. the guys taco's were amazing. cooked everything in the skillet. ground beef, tomatos, onions, peppers, with taco powder. would fry the shells and then take them out and put the mixture in them, fold them over and seal with toothpicks and back into the skillet to fry some more. man they were good.

My late grandmother on my mom's side always said catsup.

And still cooked with lard, with Vitamin D milk in the fridge - none of that thinned out 1 or 2% stuff. And don't even go there with skim.

    Good memories.
