top 10 cheese

    Find a small (6-8 oz) wheel, and get some puff pastry, your favorite jam, and some vinegar.
    Wrap the brie in puff pastry, wipe it down with some butter, and bake it at 375 until the puff pastry is nice and brown.
    Meanwhile, mix a half cup of jam (I prefer raspberry, but you do you) with two tablespoons of vinegar and bring to a boil.
    When the puff pastry is done, take out of the oven and pour the jam mixture over the top. Serve with crackers and a small knife.

    We do it at the restaurant. Don't use jam, just raspberries, sugar, water, and balsamic. Looking for that sweet/salty/sour/meaty taste.

    Can I leave the sugar out, or use a substitute...like honey, or something?? I don't own sugar.

    Honey would work. It's just trying to get a combination of tart and sweet. Use a little less water.

    My wife and I were at a brewery yesterday that offers pretty good food (Troegs in Hershey. If you're nearby, it's worth a visit). She wanted to get the local cheese plate for an appetizer.

    3 local cheeses with nuts, dried crans, local honey, jam, etc. A little bougie for me usually, but whatever.

    One of the cheeses was a blue cheese that was seriously next level. Best I ever tasted. The longer I chewed, the more flavor developed.

    Or maybe it was the 13% ABV beer I was drinking... :roflmao:

    Not at the brewery. No.

    All I know is they call it the "Local cheese plate." The honey, jams and fruit are from local farms. I know they have a working relationship with Caputo Brothers Creamery for some of the cheese. I don't know if the Birchrun Blue Cheese was made there. I checked Caputo's website, and they're not selling any. Just don't have any in stock? Or don't make it? I have no idea. This is all new to me.

    If you like Blue you might want to try some Stilton cheese. I really like it and it has that strong flavor
