It's the system.

Take very little risk for most of the game and play great defense.

Roll the dice at the end of the game and hope for the best.

Limiting the number of dice you throw is a good strategy when you know you're going to lose more bets than you win. Then if you get a run of good results in a small sample, it looks like skill.
