I started a big pot of stuffed pepper soup today (Saturday). It's great off the stove, but actually even better after it cools and gets reheated. There will be a big bowl hot and ready for kickoff tomorrow afternoon.

I cook the rice in beef broth until it's almost done and then incorporate it into my onions, peppers, sausage, and ground beef. That simmers for about an hour.

3 pounds ground beef, 1 pound italian sausage, 6 big ole bell peppers, an onion, 8 cups of white rice, and 60 oz. of diced tomatoes and tomato sauce. It's a BIG pot of soup. Damn, I love this soup!

If we lose, I'll never cook it again.

Shepard’s pie with homemade mashed potatoes on top. Placed in refrigerator this evening and will bake tomorrow with golden crust on top for halftime. Homemade Tiramisu for dessert. Being from Eastern PA, really need a win tomorrow.
