I've occasionally complained that Ben throws to covered receivers, resulting a high number of INTs. But often these throws result in long gains much to my surprise. Good thing I'm not an NFL coach.
Here we see one such throw to a covered receiver that results in a touchdown (with the help of a pushoff) when it didn't look like it was a good idea.

Picture 1: Carolina in a cover 2 with the underneath DBs playing man to man.

Picture 2: Carolina LB playing man to man on TE Vance McDonald.

Picture 3: No way he's open. LBer has perfect coverage. McDonald is NOT open.

Picture 4: A perfect Ben pass, high and to the back of the endzone, a pushoff by McDonald and a touchdown.

I mean in the NFL “open” is a complicated thing. There are much smaller windows, and the really good QB’s can “throw a receiver open”. If a receiver is going against man coverage down the sideline, the QB can throw a back shoulder ball and then the receiver all the sudden gets separation because he can see the ball and the defender can’t.

Or there can be tight coverage on an out or crossing route and the QB throws low and away so only the receiver can get it. Sometimes the QB has to fit it between coverages like throwing over the linebackers but underneath the safeties in zone coverage. Or sometimes throwing to a spot in the zone he knows is soft and expecting that your guy will go and get it.... or even just throwing it to your star player when he’s covered because you know he’s better than the defender and will just go and get the ball.

this is why so many guys who are good in college don’t make it in the nfl. It’s a tighter window, a deeper understanding of the defenses (and your own offense/receivers), it’s navigating the traffic around you and keeping your eyes locked in on the play downfield.

Open vs. not open isn’t a simple concept in this league
