my son has a pellet smoker and i told him to try a chuck roast instead of brisket one time. he used a rub called black and tan. OMG every bit as good as a brisket without the brisket price. tender juicy and what a flavor. he ran out of black and tan and couldn't find it so he's done the last three with different rubs. all came out extremely good. not quite as good as the first one because of the rub taste. still very good though. couldn't tell a difference from brisket. cook just like a brisket.
