What's Cookin? offseason

    OK not much going on here so let's get some new stuff to talk about.

    let's go with favorite recipes for tailgating. if you don't tail gate maybe some picnic favorite dishes that we all can try at a tailgate, whether it's HS, college or some other sports event that you do this for.


    ranch beans or cowboy beans i've heard them called. 2 cans of bush's beans for starters. one can of butter beans. one can of great northern beans. i usually do ground beef and sausage mixed and browned. bacon fried crisp and crumbled, one can tomato soup without adding water, brown sugar and a little ketchup. mix together and bake for about 40 minutes at 350. this can also be done on the grill in an aluminum tin. sometimes, if smoking roast or brisket, it is shredded and added in :cool:

    Green chile as a dip

    Ground beef and/or pork browned with chopped onions a some garlic

    Cook in some flour to absorb the grease and let brown somewhat

    Chicken broth

    Add Frozen chopped hot green chile about as much as the onions and beef kind of like a pound cake

    Simmer until thick an hour or more

    Top with cheese and eat with chips or cooked flour tortillas

    Beer

    You can use canned green chile but that is preserved with citric acid or some equivalent and tastes yucky

    Depending on where you live you may have to go on amazon to find frozen chopped hot green chile

    A little expensive but it is 10#

    hot weather less cookin

    fresh shrimp and cobia ceviche
    cucumber pineapple salad
    herbs chard cukes tomato and zucchini are kickin in the garden

    Simple and less flatulative - can of Hormel ( no beans) poured over original Fritos, maybe some sliced black olives and green onions, melt some shredded cheese blend over it and either fork it or do messy finger food with it. Some, not me, choose some sour cream topping.

    Wife grew up in a small NM town and in the school cafe they got something like this for lunch called Frito Pie

    Although I’m doubting the olives

    I cook a lot. I cook really well. I like hot dogs. Brown mustard and onions.

    Two years ago I planted two zucchini and my wife asked me to plant less
    This year I planted one.
    Wife just asked if I can plant a half of one.

    what is that? veggie soup? lol don't you have the in-laws send you those chili's from new mexico? i know my son is growing all kinds of peppers in his garden this year. i can't eat that hot stuff anymore, it kills me for the next 24 hours. he loves mexican food. indian food. hotter the better for him. :cool:

    a local HS has them at their concession stand as taco in a bag. i agree no olives. it is pretty tasty watching a football game on a friday night. :cool:

    If you use canned chili I recommend trying Wolf Brand Chili No Beans

    First ingredient is meat not water and they don’t use soy filler

    What I pulled out was some frozen green chile I previously made with the recipe way above

    We go to NM each spring and I plan accordingly and leave room in my suitcase to bring food home. Last year Mrs jeh and one of her friends were talking about trying to pack in just one carry on bag and she swore she could do it. Then she put her excess crap into my suitcase and I didn’t have any room to bring food back. Then she had the audacity to brag how she made it in one carry on. That’s BS and ain’t not none happening next year. I get two free checked bags. Next year I’m checking an empty bag.

    This further confirms many of our suspicions that mom serves them chicken nuggets
