I found eating pizza in Italy with your hands is uncouth and sticks you out for being an American

I normally use a knife and fork so I fit in

Get red child powder from Hatch NM or a good Mexican grocery. Do not use the stuff that has oregano, cumin etc already in it. I buy medium and hot and mix them together to get medium-hot. That works for my taste buds. A pork butt works best nothing lean like loin.

    Ok smarty pants

My wife is from New Mexico and I learned to cook it by her dad who owned a cafe

New Mexican posole emphasizes simplicity with hominy, pork, and red or green chile as the primary ingredients. Mexican pozole varies by region but typically includes additional garnishes like cabbage, radishes, tomatillos, and oregano. The New Mexican version reflects the state’s distinctive chile-forward cooking tradition.

    It’s very tricky
You got to squeeze all the water out of the cauliflower
I have ate cauliflowers pizza and it tasted good
Not sure if I am down for the labor intense procedure of making it homemade
