What's Cookin? Houston barbeque edition

    well, well, well we got here and it's a Monday night game. should be colder after this warm snap. the barbeque chicken worked last week. that was regular season goods. now it's playoff grub time. could it be time for some change up? i'm thinking some Texas barbeque. beef ribs. brisket. pulled pork. somewhere in that family. we have a long horn store and ranch near us so maybe some of that beef.
    what you got?

    T-bone steaks on the grill with garlic butter (medium rare) with homemade bernaise sauce. Four cheese scalloped potatoes with a hint of chopped jalapeños (reapers were thrown out last week). Grilled asparagus with EVOO and onion powder. For the 4th quarter hopefully a chobia and Johnny Walker Blue as I bask in a playoff win!

    Although my stomach is not a fan no more I'll have a hot dog in honor of Wiley. For the past 3 years I have been taking out of date Nathan's hot dogs to a friend on a golf course. They are frozen solid and only cost a dollar for 8 pack at local meat store.

    I'll let you guess what Wiley is. Think Dancing With Wolves. Closest he ever was to me was about 40-50 yards.

    Bacon-wrapped hand trimmed filet mignon with sauteed mushrooms, bakers with sour cream, and either a salad or asparagus.

    I can admire a man who makes his own béarnaise sauce

    And when my asparagus shows up in the spring I will try the onion powder technique

    OK was told it would be the left over carrots that were in Sunday's roast and corn. :cool:

    Made Mississippi Pot Roast today with garlic potatoes and green beens. It was delicious and there is a lot left over. Those are the type of meals that taste better the next day. I’ll just slow cook that thing again tomorrow starting about 3 pm.

    what is mississippi pot roast?

    i agree about the next day thingy with roast beast. that is what we are having cooked in gravy as a hot roast beast sammy. :cool:

    3 lb chuck roast. Packet of ranch dressing mix. Packet of au jus gravy mix. A whole stick of butter. 5 jarred pepperoncini peppers. Place chuck roast in bottom of crock pot. Sprinkle packets of ranch and au jus over top dry. Place entire butter stick on top uncut. Add pepperoncinis on top. Place lid on top and cook for 8 hours on low. You can thank me later. Potatoes and dinner rolls for sides.

    It's 30 Degrees currently, I had to look at it a couple times because it feels a lot colder, and by game time it is supposed to be 35.
    I wish I had a thermos full of Chilli for tonight.
    By game's end, Steak houses will not be open.
    So, we're debating pregame steaks at either Hyde Park or Eddie Melot's...... or head over to McKeesport to visit an old friend and grill out some steaks.
    It sounds like streak is on the menu.
    Probably a hot dog or two at half time.

    I gonna hope we pull this one out..... Houston's Defense is solid across the roster.

    I'm trying to trick the Football deities, so I'm switching it up. LoL
    I'm having a vegetable rotini with a homemade tomato sauce made with peppers, hot Italian sausage, beef , black olives, and mushrooms.

    How do you roast it exactly??? Do it wrong, and it's too dry.

    Season with a rub of herbs mixed with olive oil. Bake at 425 for around 13-16 minutes depending on thickness of the filets. The high temp and oil with the herbs create nice caramelization. The oil in the rub helps with keeping it moist.
