What's Cookin? preseason opener with pirate booty

    I love the hole in the wall restaurants where I’m the only person that speaks English as a first language. Used to go to this place in st croix for dinner. It was an old “house” right on the ocean. A little old couple owned the place. He would go fishing during the day and she would prepare whatever he caught that day. It had a pea gravel floor. If it rained water would run through the dining area. In one door and out the other. The food was freaking awesome!

    went to his places a few times a year for a couple decades
    beautiful views fun every time

    If you are using skirt steak calling it a cheaper cut of meat has changed over the years

    In the 70’s I was in Chicago and there was a large Mexican population

    I had to go to real Mexican butcher to find skirt steak and it was inexpensive

    And at the same time fajitas became popular and the price went way up

    Just like chicken wing prices used to be the were used for broth now they can cost more than breast meat

    With that I have a local butcher that has skirt steak and I grill it and really like it

    We used to go diving around the Caribbean and Mexico and if we found a dive master we liked we would make a deal if he would take us to the places where “he” went we would cover all of his beer

    We wound up in a lot of places where it was like walking in with Norm from Cheers but Im not sure it would have gone well on our own

    It’s also interesting and this day and age many people think they are different

    Only thing worse than a boiled dog is convenience store dogs on those rollers for 14 hours turning green.

    sounds like Italia will be a good trip. My grandparents were from there. Rome (grandma) Sicily ( grandpa). Amazing food. Different regions have such a different cuisine. :cool:

    That's exactly what it was/is and now they pre-marinate it in the markets and sell it as Carne Asada for the same price per pound as Porterhouse/T Bones. Think of how many billion tons of potato skins were thrown in the trash before TGI Fridays figured out they could scoop out most of the potato, add some cheese, green onion and bacon bits on them, broil them and sell the whole thing as a delightful appetizer. Could carrot skins be next? :rolleyes:

    Have you been to either of their home areas?

    Relatives there?

    I have a good friend who’s parents are from a small town SW of Rome

    I was able to get within 30 miles trying to visit but it was a hill town with no train station anywhere and that was how I was traveling

    I’m back in the Western PA area but friends from Chicago visit and bring “mystery meat” from a Mexican grocery

    I believe it is skirt steak sliced long wise into about 3/8” long strips and marinated

    Unfortunately where I now live purchases like this are not an option

    Every time I've bought that $hit(that drink) . 3 different times,I've gotten sick days afterwards. I guess there is something in it my body doesn't like.

    LoL. You are still older than I am. I remember because on the Sundays I was an Altar Boy, my family would have to wait for Me, and instead of a family dinner, they would buy chicken from a local grocery store, and wings were my favorite .

    I remember a quarter on Tuesday nights in college. A couple beers and ten wings for less than 10 dollars.

    This is “just cooking” so Im not hijacking the tread

    I spendt a lot of time in the Caribbean including Grenada

    I’d go to restaurants and huts and chicken was prevent but only legs no thighs

    I always wondered what what do these people do with all th3 thighs (I left the 3)

    Then one day while I was down on the freight docks a net holding a pallet broke and the pallet hit the tarmac and boxes of chicken legs imported from the US broke open

    Then I realized the US was making chicken tenders out of the thighs and shipping the legs to third world countries

    Personally I prefer thighs a local restaurant does thigh night with the typical sauces

    Favorite restaurant was Rudolph’s until it burned down Grandma’s Chicken and curried lambi (lambi sea snails' not lamb)

    Now just straight up fried chicken, I will eat it all, but I rather have the wings, or breast , but for making other stuff with chicken....
    thighs are some of the best parts of a chicken for making recipes with them . They are tender, and don't dry out easily.
