    Zucchini lasagna is actually very delicious. My Mother even makes Zucchini bread.

    Better than me. I had part of a leftover homemade chicken pot pie, and some leftover chili. LoL

    I’ve never had a leftover chicken pot pie

    For some reason they are never left over

    Or was that one of those Costco sized

    agreed about the take over the world. mom used to and i still do, cut them up in pieces fry them in just a little oil until soft and beat a couple of eggs with parm and romano cheese and add to the mix. Mmmmm, good stuff. very simple. :cool:

    Mac thanks for the idea! I will call this a zucchini frittata.
    I was not always interested in cooking. In fact, I weighed 307 lb and was a human garbage disposal! I had a new son, and frankly if I did not change my ways I knew I was not going to see him grow up. I had gastric bypass and became ovo lacto vegetarian. I now weigh 156. I decided that my meals should be special, and I got interested in cooking tasty healthy food. My wife is my test audience.
    My son turns 28 in a few days, and I have lived to see him get his Master’s degree and become a high school teacher, and listen to a lot more Steelers games.

    congrats. if you get a chance try it. it really is quite tasty. heck i make a whole meal out of it at times. i'm working on the weight thingy as well. went to the heart dr. today and got yelled at. always. i did go from 355 down to 278 after my heart attack 3 years ago. it's since creeped up to 315 today at my weigh in. time to get back to it. low sodium crappy food diet. again. :smiley1::cool:

    Mac, the food has to taste good or you can’t stay on the plan for long. Protein and vegetables will do it. My taste buds eventually changed and I can’t stand the smell of fried breaded crap now. Take a half hour walk every day, in a mall if it is raining or snowing. I guarantee your doctor will be pleased.

    My menu changed a half dozen times. Ended up making shrimp and grits. Not a great effort and not the best results. Just got too hungry and cut corners.

    oh yea i agree you do get used to it but i don't think i ever liked it. some stuff just needs a little salt. as the dr. said if you want a taco, eat a taco, just don't do it every day. the bread and pasta's are the hard ones. being an italian and raised on that stuff. everything in moderation. it comes off. :smiley1::cool:
