    Are you a deer hunter? The rut is almost ready to kick in here in Sc. Observed a doe last night and about 20 yards in the woods buck was observing her too

    Smoked mackerel is is a regular for me. Fish smoked with pine rather than oak is more delicate (apparently).

    Marlin is very good smoked
    Wahoo, IMO, the best!
    The only way I can stand salmon is smoked.

    I didn't know this, and I don't smoke my own....I've always taken it to a place to do it for me.

    I know next to nothing about smoking meat type stuff but I thought pine was bad because of the tar resin

    Garlic Naan baked pizza with homemade sausage sauce, jalapeños, onions, bell peppers, fresh mozzarella, garden fresh basil with a glass of Chianti. Chocolate filled croissants with ice cold milk.

    no salt butter, low sodium gravy mix and low sodium beef base. at least there is that. :smiley1::cool:

    Juniper wood is piney and can be used to smoke meat.

    I always have the steak at room temp (usually out an hour or so depending on thickness) on a baking sheet on top of a cooling rack. Pat it down on both sides and just salt it. Put it in a convection oven and let it get to 105 internal. Then put it on a hot grill get great markings on both sides nicely charred. Could be done in a cast iron but I like the grill flavor. Of course mid rare. let it rest uncovered for 5 to 7 minutes and slama jam.

    Looks like we are doing pizza steaks tomorrow.

    And if anyone is going to the game tomorrow night. Looks like Orange man will be in attendance and watching from a suite. So good luck getting through security tomorrow night.
