Prague is probably the most beautiful city I've ever been in. A lot of the buildings have been there for centuries. The St. Charles pedestrian bridge was built in 1402. The Vltava River runs right through the city and the beautiful St.Vitus Cathedral overlooks the city. The metro is very inexpensive and is very easy to navigate. I've been to over 30 countries but my favorite place was Prague.

    Thats really awesome!

One of my old room mates many years ago had a book about Prague.....and thats what makes me really want to go, to check out all the old cathedrals, and take the trip out to see the Bone Church....

Definitely a city for metal heads. Haha!

Near me they turned a large Catholic Church into a brewery and restaurant
When I walked in and saw the copper and stainless kettles up on the altar area I fell down on my knees and told my wife I had found a god I could pray to
She literally ran away from me yelling “you’re going to get struck by lightning “

Had to look it up. Found a recipe in the NYT, and it looks almost exactly like my recipe for Osso Bucco, except for the meat.

Probably the Stracotto. It is more like a pot roast, except for the meat used. I tend to go with pork shanks instead of veal, since they're larger, cheaper, and after the braising process it's hard to tell the difference. I like it over pasta, but when I do it for the restaurant I go with saffron risotto, since that's more traditional.

I love some risotto. Made a butternut squash risotto last fall that was great. Also make a venison and wild(preferably)mushroom risotto.

It’s easy. Use red wine instead of white and beef stock instead of chicken. Don’t add cold stock or wine to your risotto. Keep them warm throughout the process. That way it doesn’t cool down everytime you add a ladle of stock. People are terrified of making risotto, but it’s quite easy. You just have to stand at the stove for 25 or so minutes. Personally it’s worth the effort

Own a restaurant. I don't have the training to be a chef, so just a cook. NYSteelerFan (not sure if that's right, haven't seen him in a while) was there a couple of times.

You'd be amazed at how many restaurants think risotto means you use arborio rice, throw it in water, and come back in 20 minutes. You use wine and stock, how the hell do you make tasteless risotto? But they manage.
